Stuffed Red Bell Peppers

I'm back
I discovered this recipe tonight, using different recipes on the web , and my mothers special stuffed Peppers, which is an Iranian recipe.

Ingredients:
2 red or green bell peppers
Olive oil
100 gr lean ground beef
1/2 cup rice
3 medium sized tomatoes
30 gr chopped parsley
chopped onion and garlic
salt and pepper

I brought a large pot of water to boil.(meanwhile I cut top off peppers 2cm from the stem end, and removed seeds.) then i added salt to boiling water, then added peppers and let it boil for 3 minutes, i used a spoon to keep peppers completely submerged, until their flesh slightly softened, I drained, set it aside to cool.
at the same time i put the rice in 1 cup of boiling water to cook for 10 minutes, and fried the lean ground beef with salt and saffron and oil for 3-4 minutes until it's cooked.
Now It's time for making tomato sauce. I add the chopped onion and garlic to the olive oil in frying pan (add salt and pepper), and stir it for 30 seconds then I add the chopped tomatoes. and add a little water. And I let it cook for 5 minutes.
Remember that you should preheat the oven to to 200 degrees C.
Now I add meat , rice , parsley to the tomato sauce, and mix it all. (you could add Oregano to this mixture).
Now I'm going to put this mixture inside the red peppers(stuff them actually with the mixture). At the end I add a tablespoon of olive oil and 1/4 cup of water to the mixture inside the peppers.
Now I place the peppers inside the oven . It's going to be ready in 40-50 minutes.

Meanwhile you could rest! or make SALAD! which is the thing that I do!:)
